New Orleans – Part 1

Recently we went on a cruise to Mexico and Honduras and afterwards spent a day/night in New Orleans, Louisiana.

This was my first time visiting New Orleans and I have to say I was a little apprehensive about whether I would like it.  We knew it would be busy since our arrival was one week before the 2014 Superbowl.

We were able to disembark the ship early since we didn’t need help with suitcases and we weren’t heading to the airport. After disembarkment, we took a cab to the Holiday Inn which is in the French Quarter. We had arranged to stay here for one night so that we’d be able to walk around easily.

Although we arrived at the hotel early, they allowed us to check in and did not charge us extra. That was really really nice! Our room was very large, clean and quiet.

The hotel has a swimming pool but we did not make use of it since our time here was short.

After dropping off our suitcases in the room, we headed back to the lobby and asked the concierge if he could recommend a place where we could have breakfast. The concierge was absolutely wonderful! He was very informative about where we could eat and about the area in general.

So, off we went to the Cafe Fleur de Lis Restaurant for breakfast.

We had a very pleasant (and large) breakfast here and the food was delicious! I had the buttermilk pancakes which were oh-so-moist. They were served with real maple syrup.

My husband had eggs benedict (although I can’t seem to find them on the online menu).

My son had a spinach feta wrap. Both the food and the service were really good.

After breakfast we started walking around the French Quarter and noticed interesting architecture.

Later on we saw people riding on a horse drawn carriage — I assumed they must have been on a tour.

See the building behind the fountain with the blue doors? Local artists sell some of their art here. One of the ones I met personally and whose art I thought was absolutely unbelievable was  named Wanda Wiggins. She buys local and African fabric and makes contemporary African art with them. We did quite a bit of walking and I, as usual, had my camera in hand so I could snap photos of people, buildings or things that I found interesting.

Later in the afternoon, we came across a famous restaurant called the Cafe du Monde.  Have you heard of it? I was told that if I go to the French Quarter I needed to “experience” their beignets which are square pieces of dough that are fried and covered with powdered sugar. They are very delicate, are oh so sweet (not good for a person eating paleo) and are served in threes which was perfect for us.

Paleo French Toast

Awhile back, we made some paleo banana bread that turned out very good and was quite moist.

When my son suggested that I make french toast with it, I was doubtful that it would 1) hold together like “regular” bread and 2) tastes good.  I was wrong.

I sliced the banana bread a little thicker than I normally would then dipped it in my french toast batter which consisted of:

  • 2 eggs
  • 3 tablespoons almond milk
  • Pinch of Salt
  • Cinnamon (as much or as little as you like)

It came out tasting quite nice served with fresh melon and turkey bacon.

I guess it’s not too late to teach an older person new recipes.

 

Chicken Puttanesca with Asparagus

Tender grilled chicken breasts with Italian seasonings make for a scrumptious Chicken Puttanesca. The recipe includes kalamata olives which I enjoy.

The chicken puttanesca was served with asparagus which we’ve been having a lot more of lately.  I never used to like asparagus but my palette is changing and I’m starting to enjoy it. The asparagus was served with an almond and sun-dried tomato sauce. (Not sure if you notice in the picture, but I had added some of the sauce over the chicken also …)  Yum!

I never used to make enough food to have leftovers because they always seemed to not get eaten. But, I am appreciating that when my son cooks, he makes enough so that we can have leftovers for breakfast and/or lunch. It does save both time and money that way, doesn’t it?

Anyway — another great Paleo meal!

 

 

Marriage to a Prostitute

The man defies any logic I know just by his very being. How can it be, I ask myself over and over again? And yet — it was and it is.

He married a prostitute. Yes, he knew she was a prostitute when he married her and he tells me that God told him to marry this particular prostitute and to have children with her. I’m not going to argue with him but God doesn’t normally go around telling God-fearing men to marry prostitutes.

But, He did. At least that’s what he said. I guess I’ll take him at his word but the more he tells me about his life the less believable it is to me.

It’s not easy being married to a prostitute, he told me. One time, she ran away and came back pregnant. “I don’t think the baby’s mine” he said matter-of-factly.

How’s that for in-your-face honesty?

I’ve never met the man who goes by the name Hosea. He wrote a book about his life and when I read it, it made me shake my head in disbelief. But I have no reason to doubt that his first hand account is true.

What’s interesting about Hosea’s marriage to Gomer (his wife) is that he tells me that God wanted him to understand His relationship to us by being in this marriage. Is he out of his mind, I wonder?

But the more I read, the more it becomes believable to me because in the Bible, our relationship with God is many times described as a bride with her Bridegroom.

“As a young man marries a young woman, so will your Builder marry you; as a bridegroom rejoices over his bride, so will your God rejoice over you.” Isaiah 62:5

“Jesus answered, “How can the guests of the bridegroom mourn while He is with them? The time will come when the bridegroom will be taken from them; then they will fast.” Matthew 9:15

And yet, if we believe what Hosea says about his relationship with Gomer being similar to our relationship with God then I have a serious problem because if I follow the logic then Hosea would represent God and Gomer would represent me.

Oh dear, that would be quite scandalous wouldn’t it? So here I am representing a prostitute and God represents my husband. The Bible puts it this way:

“Go, marry a promiscuous woman and have children with her, for like an adulterous wife this land is guilty of unfaithfulness to the Lord.”  Hosea 1:2

And that’s where the rubber meets the road — unfaithfulness in my relationship to God.

If I think about it, it happens all the time. I treat God differently than I do my spouse and my loved ones. Is it because God is not physically present that I so easily become unfaithful to him?

And what does unfaithfulness look like to God anyway? Well, I’ll let the Bible speak for itself …

  • Unintentional sin – “When anyone is unfaithful to the Lord by sinning unintentionally in regard to any of the Lord’s holy things … ” Leviticus 5:15
  • Cheating or deceiving – “If anyone sins and is unfaithful to the Lord by deceiving a neighbor about something entrusted to them or left in their care or about something stolen, or if they cheat their neighbor … ” Leviticus 6:2
  • Having other gods (which is the same as placing importance or priority on other things besides God) – “But they were unfaithful to the God of their ancestors and prostituted themselves to the gods of the peoples of the land …” 1 Chronicles 5:25
  • Boasting of what “I” have instead of giving God the credit – “Why do you boast of your valleys, boast of your valleys so fruitful? Unfaithful Daughter Ammon, you trust in your riches and say, ‘Who will attack me?’ Jeremiah 49:4
  • Adultery (both physical and mental) – “Rebuke your mother, rebuke her, for she is not my wife, and I am not her husband. Let her remove the adulterous look from her face and the unfaithfulness from between her breasts.” Hosea 2:2
  • Dabbling in spiritualism – “My people consult a wooden idol, and a diviner’s rod speaks to them. A spirit of prostitution leads them astray; they are unfaithful to their God.” Hosea 4:12
  • Unfaithfulness with our money (and time) - “Will a mere mortal rob God? Yet you rob me.“But you ask, ‘How are we robbing you?’ “In tithes and offerings.” Malachi 3:8

There’s so many ways we can be unfaithful to God, and for Him, it is painful enough that He considers it prostituting.

The word prostitute has more than one meaning. The normal definition we think of is of a man or woman selling their bodies for money, but it also means “to put to any base or unworthy use.”

The original Hebrew word is zanuwn which is translated whoredom, adultery, fornication and prostitution. (from Strong’s Concordance)

Am I guilty of unfaithfulness to God? Absolutely. How would my husband feel if I spent all my time in front of the TV and none with him? Or what if I took the money my husband worked for and spent it on frivolous things?

So, how can I expect the Creator of the universe — the one who gave me life — to not feel like I am unfaithful when I don’t spend time with Him or waste what He has given me on frivolous things?

Yet, it happens all the time because I am human. The story of Hosea and Gomer is so beautiful because it portrays God as still wanting me (us) in spite of what I (we) have done. He sees our “prostitution” and says “I still want to marry her.” He pursues us and tries to bring us to our senses and He will fight for us as long as there’s any chance of a relationship. Only after we continue to say no to Him does he leave us alone.

I can hear Him say “I love you Norma — even with all your imperfections I still want you.”

This is love. Can I love this way?  Can you love this way? How different the world would be if we could love like He loves us.

Lemon Dill Salmon with Asparagus

A paleo diet requires variety — at least for me. Having salmon is a real treat especially when it’s paired with tender asparagus. Yum!

The original Lemon Dill Salmon recipe was paired with cauliflower rice and kale but I much prefer the simplicity of having Roasted Asparagus instead.

I find that the simpler the meals, the better my taste buds understand what it is they’re eating. And we all know that we want to satisfy our taste buds, right?

For me, salmon is king. (Hey, I just made a funny joke … I wonder if I’m the only one who got it?) hehehe

 

 

Minnesota Snowstorm

Snow fell overnight and we woke up to at least 8 inches of snow.

Here’s the driveway. Our snow plower didn’t arrive until later in the afternoon and he was a most welcome sight. At one point he rolled down his window and said “I’m running out of room to put it.”  Then he shoveled some my way.  (laughing)

And it continued to snow and snow and snow.  I’m not sure how much actually fell but it was a LOT. I shoveled the walkway to our front door (in case someone sends me spring flowers to cheer me up).

Then I put some salt down and the walkway was a big contract to the snow banks that border it.

The snow goes way over my head in some places. Of course, that does include snow from previous days. Here’s the side walkway that I shovel so I can get the mail easily.

Around the outside of the house we have large chunks of ice that hang dangerously. Fortunately, they are in places that we don’t walk near.

I am officially tired of snow and am looking forward to the “warm-up” in a couple of days.

 

Paleo Strawberry & Apple Crumble

Here’s a paleo dessert that you can sink your teeth into — a strawberry and apple crumble. It does taste a little different than the blueberry crumble I used to make in my sugar laden days, but this tastes great nonetheless. The crumble (top) uses macadamia nuts, coconut flour and a few other ingredients. (I love coconut so have not been having problems eating recipes that contain the flour.)

It really is yummy!

One thing I have found on the paleo diet I’m on though is that I don’t really have a need for dessert after dinner as I get full enough on the meal. So — although I have always liked desserts, I don’t seem to eat them as much as I used to.

That’s a good thing, right? Even if the desserts are healthy!

 

An Injured Guanabana Plant

Awhile back, I wrote about the guanabana seed that I brought back from Puerto Rico and that has grown into a nice little plant outside of its tropical environment.

But when we went on a recent cruise, my husband brought the heat down in the house to 55° fahrenheit which left the house here in Minnesota a tad bit chilly.

When I returned, the guanabana had lost most of its leaves.

I thought for sure we had killed it but I continued to water it and hoped and hoped that it would be revived and, guess what? New leaves are starting to sprout. Woohoo!

It’s not out of the woods yet though but I’m hoping that those small leaves will come back healthier than when they left.

Moral of the story? If you have something you treasure make sure you take care of it even when you’re not around.

 

Pepper Steak with Egg Foo Young-ish

Winters and crockpots are always a good combination so we recently bought a new crockpot to allow our meals to slowly simmer.

This pepper steak was good and I have been eating it for breakfast as leftovers for a couple of days now. It is unusual to have steak for breakfast instead of cereal or toast but unusual does not mean bad. It’s quite filling actually.

The recipe calls for bean sprouts but we did not use them.

The pepper steak was served with steamed broccoli and egg foo young-ish. Quite a funny name for a fritter-like pancake, no?

We included most of the recipe ingredients except for the ham so if you try this recipe, adjust the recipe to your tastes. That’s what cooking is all about — tasting and adjusting.

 

Paleo Granola

I am not a big fan of granola but my son is always coming up with different things we can have for our meals — including breakfast — so it was not unusual that paleo granola came into the picture as I recently threw out our Honey Nut Cheerios and other cereal that has been sitting in our pantry for awhile.

I had this granola with warmed Almond Milk. For some reason, I haven’t been able to drink Almond Milk cold. Is that unusual?

It tasted okay. The nuts in it were a little too large for me so I probably should have cut them up into smaller pieces. I’m not sure if that would have made a difference for me though as I’ve never been a big granola fan.

Overall, it is a good diversion from having eggs in the morning.
