Simply delicious! I love to make this cheesy casserole.
Ingredients
- 6 cups peeled, sliced baking potatoes (cut into 1/4 inch pieces)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 3/4 cup milk (I normally use skim)
- 1 1/4 cup shredded Swiss cheese, divided
- 3 tablespoons grated Parmesan cheese, divided
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 clove garlic, minced
- Paprika
Directions
- Preheat the oven to 350 degrees Fahrenheit
- Grease an 8 inch square baking dish
- Cook the potatoes in boiling water 5 to 7 minutes or until tender, then drain
- In a 1 quart saucepan, melt the butter over medium heat. Once melted, stir in the flour until it’s absorbed
- Stir in the milk using a whisk
- Heat this through stirring until the mixture comes to a boil
- Remove the mixture from the heat and stir in 3/4 cups of the Swiss cheese, 2 tablespoons of the grated Parmesan, the salt, pepper and the garlic
- Arrange half of the potatoes in layers in the baking pan then pour 1/2 of the sauce over the potatoes; arrange the rest of the potatoes on top and pour the rest of the sauce over them
- Sprinkle the remaining 1/2 cup Swiss cheese and 1 tablespoon Parmesan cheese over all
- Sprinkle lightly with paprika
- Bake 30-40 minutes or until browned on top
- Let stand for 10 minutes before serving
