Re-Starting on the Paleolithic Diet

After returning from a cruise where we were tempted with every kind of food under the sun (well, okay, don’t take that too literally), I decided to weigh myself to see what kind of damage had been done after a week of moderate restraint.

Arriving in the bathroom, I looked at the scale and scowled at it. Yes, I had eaten bread on the cruise although not a lot … Yes, I had had some desserts (one being a cheesecake that was simply too sweet for me to finish) … Yes, I had had hot chocolate … (You wouldn’t expect anything less from a chocoholic, would you?)

But it was time to weigh in. One thing I learned about weighing yourself is that you have to be as light as possible so empty the bowel and remove all clothing for a true weight. lol

Our scale is one where you have to touch it with your toe then wait for it to show “0.00” before getting on.

I know no one cares about my scale.  I’m just procrastinating in letting you know my weight gain, uh, loss?

Naw — I gained 2 pounds and  was quite pleased as that’s exactly what I thought I had gained.

Now we’re back on the Paleolithic Diet full time instead of part-time. Since I’ve already had day-by-day postings of a lot of  paleolithic meals I decided to post a few new recipes on one post that we’ve tried this week. (Hope that works for you all.) Breakfast and lunch continue to be quite simple since I tend to eat leftovers most of the time although we did have a new tuna salad recipe (see below).

This tuna salad was quite good and since my son made a lot of it, I had some for breakfast one morning and some for lunch twice. Regular mayonnaise was used in this salad although you could make a paleo mayo that is more friendly to this diet.

Next we had a really really really delicious soup. Don’t let the name “Mulligatawny Soup” deter you from trying this soup. Totally delicious!

The soup was served with an orange cranberry bread. It was “okay.” We need to work on tweaking it a little I believe. The crust was semi-burnt but the bread was quite moist.

Another day we had roasted chicken which was also delicious. It was served with mashed potatoes.

Oh … are you wondering about the mashed potatoes when we’re not eating potatoes on this diet? Doesn’t it look delicious?

Actually, this recipe is called truffled cauliflower mash and it tasted very good. I’m not sure I would have noticed they weren’t potatoes except that it has a wee bit of a different taste to them. It doesn’t taste like cauliflower though.

I’ll be posting more pictures and recipes as time goes on although I think we’ll be making some of these recipes over again so there may not be as many new ones as I’ve previously posted.

The paleolithic diet is not about losing weight for me but about eating more healthy. Weight loss is a bonus.

Since I was a vegetarian for over 20 years, it does feel like I’m eating a lot of meat.  Once I start cooking on my own, I’ll try to incorporate more veggie type dinners.

Gulf of Mexico Sunsets

A recent cruise from Louisiana to Costa Maya, Belize, Roatan (Honduras) and Cozumel took us through the Gulf of Mexico.

I enjoy being on the water and falling asleep to the gentle rocking of the ship like a baby being cradled in the safety of their parent’s arms.

But now it was time to find a quiet corner and behold the beautiful landscape that lay before me. I snapped a few pictures and, frankly, felt quite small as a human being. The scene before me reminded me of how majestic the earth can be as if  God took His finger and painted the beautiful scene Himself.

Preparing for a Winter Vacation

I am so thankful that we decided to take a last minute winter vacation as Minnesota weather was scheduled to be in the negatives the week we were to be gone.

We had a lot of options on where to go but decided we wanted someplace sunny, warm and where we didn’t have to plan a lot of things like renting a car and booking a hotel room.

The easiest option for us was a cruise and we decided to leave from New Orleans instead of Florida since I had never been to New Orleans before.

Norweigian Cruise Line (NCL) had a very good special for a 7 day inside cabin cruise so we jumped on the offer. Airfare was mostly paid by air miles that we used — a big plus in keeping our expenses down (especially for a last minute trip).

My husband found a park-n-fly hotel — The Holiday Inn in Eagan, Minnesota. I had never heard of a park-n-fly, have you? Basically you park the car at the hotel, spend the night, and the hotel shuttles you to and from the airport. It worked out very well for us and was cheaper than parking at a parking lot or taking a cab to/from the airport.

The room was nice and had all the usual toiletries. But — yes, there’s a but — we could not get the room temperature to cool down so it was very warm in the room. I guess that beats the alternative, eh?

But, who can sleep, anyway, when you have to get up very early to catch a plane?

The next morning, when I reached the lobby, I asked the desk clerk if they had a place where we could leave our bulky coats (heading from a cold weather state to a warm weather state takes innovation). She told us we could leave them in a front closet which I thought was a designated spot for coats but as I opened the closet door, I found it was a janitor’s closet. So that’s where we left three winter coats as we quickly boarded our shuttle.

I have to say, the male driver was quite chatty at 6 a.m. while our droopy eyelids tried to stay awake on the ride to the airport.

Everything went quite smoothly. Our first stop was in Chicago where we had breakfast before boarding the second plane to New Orleans.

“Warm weather here we come!” my brain thought gleefully.

Return from A Sabbatical

Monday evening I returned from a very short sabbatical in which I went to New Orleans and took a cruise to Mexico, Belize and Honduras. It was very nice and relaxing.

The neighbor across the street told me that we picked the best week to go as it was very cold while we were gone. I might have to take issue with him as today was quite cold with the wind chill a -18° degrees. Tomorrow will not be much better with a high of 2 degrees. The north wind that comes from Canada makes all the difference in the world as to whether it will get extremely cold or just cold.

During my time away, I did fairly well trying to stay on the Paleolithic diet but there were times throughout the day when I simply wanted a piece of bread or — quite honestly — a hot chocolate.

I’ll be posting pictures soon of our escapades and also of the day we spent in New Orleans. Mardi Gras has not started yet but the Superbowl is this weekend so there were plenty of people out and about. We even attended a dog parade — of all things!

Tonight I just want to sit in front of the fireplace, watch TV and stay warm.

 

New Furnace

On a cold quiet night while tucked warmly in bed with just the hum of the furnace being heard, something was amiss in the house.

The hum stopped and did not restart. What could it be? Checking the thermostat, my husband could tell something was wrong. It was getting colder in the house and the furnace was not starting automatically.

Turning on the light, he headed downstairs to see what the problem was.

Drip, drip, drip. The top of the furnace had water on it. Looking above, the humidifier that we recently cleaned was leaking onto the furnace. Turning the furnace off, my husband cleaned the water up and headed back to the comfort of a warm bed.

When I awoke, my head was cold. I headed to the bathroom and said to no one in particular “It’s cold in here.” The words “the furnace stopped working” pierced the early morning air.

Sometimes it’s just too early to have problems, isn’t it?

Nevertheless, I waited til 8 a.m. and called the furnace company who had been out earlier this fall to clean the furnace. They gave me a 2 hour appointment time and arrived around noon.

The technician opened the furnace door and saw water. He checked and re-checked different areas of the furnace and there were several places that were moist.

“Well, I’m going to have to replace the control panel,” he said. “The problem is … ” Uh oh, my thoughts interrupted him. “The problem is that once I replace the control panel the problem still might not be resolved because there are other areas that are wet. If it were me, I would replace the whole furnace instead of spending a lot of money on a 20 year old furnace.”

“I have to also let you know …”  Oh dear, here it comes.  “… your humidifier is not going to work with a new furnace so you’ll have to replace that too if you get a new furnace.”

Oh, great. I called my husband who hates to replace anything that can be fixed and we agreed to replace both the furnace and the humidifier.

The Fraser Johnston furnace was replaced with a Coleman that has a 95.5 AFUE Variable Speed. In layman’s terms, it’s supposed to be really good.

The humidifier is a Honeywell and is fan powered. It’s a little different from the old one in that it has a filter that needs to be replaced once a year. They relocated it so it wasn’t over the furnace now.

Our new humidifier and furnace seem to work a lot better than the older ones as I don’t feel as cold in the house now that the humidifier is working properly.

For Christmas, my husband received a Nest wall thermostat. It’s really nice as you can set your thermostat from your phone when you’re away. You can also check online to see when the furnace kicks on and off.

Before we bought our house, a friend cautioned “you shouldn’t buy a 20 year old house as things start to fall apart starting at the 15 year mark.” I guess he was right.

The Red Wagon

Do you remember riding in wagons when you were younger?

I never had a wagon — just a bicycle — but I do remember red wagons and even see them for sale in the stores. Something about a red wagon makes it seem nostalgic.

What Do Minnesotans Do In the Winter?

It gets quite cold here in Minnesota. Well, sometimes. I actually enjoy the weather when it’s in the 30’s and the sun is out. But when it gets to -2 or -7 and that’s the high temperature for the day … well, that’s not much fun at all.

On a recent weekend, my husband and I went for a drive and passed a couple of lakes — Lake Jane and Lake Demontreville. Things sure were hopping in these lakes!

I was hoping to interview an ice fisherperson this year but my fear of falling through the ice has prevented me. As I look at all the people out on the lake I know that my fears are unfounded — especially when large trucks drive out to the middle of the lake. “Oh dear …” I tell myself.

Here are a few things that happen on a lake in the winter in Minnesota …

It appears that ice fishing is a “social” sport. I can’t imagine myself hanging around talking with my friends or reading a magazine waiting for a fish to bite. Can you? (laughing)

As we drove through the neighborhood, we came across people who were inner tubing at Green Acres in Lake Elmo. It looked like lots of fun but someone (no, not me!) didn’t think it looked all that fun.

It sure looks relatively simple. Grab your tire, head up the hill on the rope provided and slide on down.

What else is there to do on the frozen lakes?

Well, there’s augering … I know, that’s not really a word. An auger is a boring tool that they make holes in the ice with so they can fish through the holes. So — I decided to call it augering. Looks like a lot of work! Perhaps that’s what keeps him warm.

A Paleolithic Diet – Day 16

I had an early morning errand to run so I made a quick banana blueberry smoothie for breakfast today. I only managed to drink half of it because it was too cold (I like most of my drinks at room temperature).

Brrr … it was cold outside today. The north wind seemed unrelenting and it took my breath away. By the time I got home, I was really hungry. I scrounged around inside the refrigerator and found some leftover eggplant dippers that I devoured. Then I finished my morning smoothie (a little odd I know since it was now warm).

Dinner rolled around pretty quickly and it was absolutely scrumptious. We had chicken pumpkin curry sliders, thyme garlic pan grilled asparagus (with tomatoes) and thyme roasted sweet potatoes. One can’t go wrong when they have sweet potatoes thrown in with dinner — my favorite!

I’ve been getting used to drinking more herbal tea with a tad bit of honey added.

And let’s not forget to drink water! Lots of water!

 

A Paleolithic Diet – Day 15

Breakfast this morning was a cherry scone with slices of an orange and a tall glass of a banana and blueberry smoothie with coconut milk that I made in the blender. Delicious!

I used to have these smoothies for lunch in the summer but they taste just as good in the winter.

For lunch I had leftovers from previous days, i.e. red cabbage and chicken apple salad.

Recently, I bought a large bag of the small clementine oranges and snack on those every now and again.

We decided to go out for dinner and did a search on the internet for restaurants that serve food that we could eat and found that Ruby Tuesday in Oak Park Heights has a gluten free menu. The same menu also lists entrees that are soy free, dairy free, etc. And they also have a salad bar. Woohoo!

The waitress was very informative and quite cheerful. She did not seem hesitant in speaking with us about what our options were.

For dinner, I decided to have a salad with the petite sirloin and sliced tomatoes that were in a balsamic vinaigrette. Everything was perfect.

Later in the evening, I had a few sweet potato chips that I found at Whole Foods– just because I wanted to. (hehe)
